I tried this recipe because it's vegetarian and I had all the ingredients in my kitchen, not because it screamed, "I will be delicious." But as I ladled it into my bowl, squeezed lemon juice on top, and took that first fragrant mouthful, I remembered an old maxim, "Don't judge a curry by its lack of vocabulary."
