Wegetables Wanyone?

My search for easy vegetarian meals to love continues.  This week, I found a recipe for Lentil-Orzo Casserole in an past issue of Vegetarian Times (I guess I'm old enough to have thirteen year old magazines kicking around).  I decided to make it because I happened to have all the ingredients on hand.  I rarely eat lentils, but always have them in my cupboard because I like to pretend that I'm a healthy eater.  As for the orzo, my husband picked it up months ago to satisfy his number one rule of grocery shopping, something he calls Principia Varietatas.  I chopped the carrots and rinsed the lentils and ground the bread crumbs, and thought this would be better with cheese.  But when it came out of the oven crispy, golden, bubbly, I changed my mind.  I liked it more with each bite.  The carrots make it sweet, the olive oil makes it rich, and the lentils make it hearty.  I ask for nothing more.
