Wegan Wesadillas

Dear Vegetarian Times,

I so enjoyed making and swallowing Chipotle Asparagus Quesadillas, the recipe for which is on page 34 of your April/May 2014 issue.  Chipotle peppers are new to me and I thank you for introducing us.  In my opinion, your choice to pair the spicy peppers with the mellow roasted vegetables was a delicious one.  I am proud of you.  On the other hand, I think you made an error in naming this otherwise very fine sandwich a quesadilla.  Does not a quesadilla require queso?
